Production Details Harvested between mid-February and mid-March. Grapes were crushed into open concrete fermenters, given a few days of cold soak, then fermented with regular punch-downs; the Wine Advocate review specifies two punch-downs per day. The wine matured for 14 months in 100% French oak, 20% new, followed by 8 months in tank.
