Production Details Official producer commentary says the 2017 ripening period in the Southern Cape was characterized by cool nights and warm days, the grapes were exceptionally healthy, and the natural acid and pH levels were outstanding. The producer also says high natural acid levels limited the use of added acid and that low-yielding vineyards, high natural acids, and moderate ripening temperatures contribute to the aging potential of the Sauvignon Blanc.
