Production Details Hand harvested in the early morning, then held overnight at 4C before hand sorting to berry level. Each batch fermented separately in small vessels, then was gravity drained and basket pressed to barrel. The wine was inoculated for malolactic fermentation and spent a further 18 months in 79% new French oak and 21% second-fill French oak barrels.
