Production Details The 2022 Pierre blend came from 5 vineyard blocks on steep Constantia slopes ranging from 280 m to 360 m above sea level. The first 34% of the blend came from clone SB10 on rocky terrain. That lot was destemmed and crushed into a small cuve, cold-soaked on the skins for 3 days, fermented on the skins, then pressed to barrel after 7 days. The remaining 66% was harvested three weeks later from Semillon GD1 and Sauvignon Blanc clones 10 and 11. After a 16-hour skin soak, those berries were pressed to a clay amphora and an old French oak barrel for co-fermentation. All batches matured on their gross lees for 8 months before bottling.
