Pressing Method Oxidative And Whole Bunch Press
Production Details Viognier from Constantia was oxidatively pressed and fermented in old French oak. Clairette Blanche from Voorpaardeberg, Colombar from Overhex, and Roussanne from Breedekloof were whole-bunch pressed and fermented in old French oak. Chenin Blanc was sourced 50/50 from Overhex and Darling; the Overhex portion was fermented on the skins in concrete, while the Darling portion was whole-bunch pressed to stainless steel. The wine was bottled under the #SAVESAWINE closure.
Tasting Notes
Nose: citrus zest, mandarin, cardamom, cumin, ginger, orange oil, juniper berries
