Production Details Blend of various estate parcels kept separate through vinification and carefully blended to express Klein Constantia terroir. Harvested at 4am. 36 different blocks were harvested and vinified separately. Only free run juice was used from a combination of whole bunch and destemmed grapes. 25% of the fruit underwent 12 hours of skin contact. Fermented with 80% wild fermentation using 100% organic nutrients.
