Production Details Each parcel is carefully identified and blocks are split into multiple portions in order to harvest everything at the utmost perfect ripeness. Everything is then bunch and berry sorted to ensure that only the healthiest ripe berries are selected. There is minimal extraction during fermentation and Malo-lactic fermentation took place in barrel 60% new French oak after alcoholic fermentation and then is aged for 16 months before blending and bottling.
