Production Details The Bernard Series Pinotage vineyards are situated in South Africa's cool climate growing regions, influenced by nearby Atlantic Ocean sea-breezes. Each lot was harvested separately, with the two regional sites hand-picked in the early mornings. The Darling vineyard block was harvested about two weeks after Stellenbosch. Fermentation took place in open-top concrete tanks with pump-overs and hand punch-downs every three hours. Minimal intervention ensured a natural expression of Pinotage, with pressing after a maximum of five days on the skins.
