Production Details Lutzville and Darling batches were vinified separately for later blending. Handpicked grapes were crushed and given about 6 hours of skin contact before the juice was racked and settled for inoculation and fermentation in stainless steel tanks. About 18% of the juice was inoculated and fermented in a combination of new and second-fill French oak barrels and kept on the fine lees for 100 days before the portions were blended, protein stabilised, cold stabilised and bottled.
