Production Details The grapes are sourced from three different sites. The Polkadraai portion was picked mid-February from Karibib farm. The Banhoek portion was picked mid-March from Summercourt farm and the Elandskloof portion was also picked mid-March from high altitude vineyards – 700m. Whole bunch pressing for natural fermentation in 100% old French oak barrels followed by natural malolactic fermentation. As little batonage as possible. No acid additions were made to this wine: maintaining the natural acidity is a key component for us.
