Production Details Single-vineyard Chardonnay. Grapes were hand-picked in the early morning and gently whole-bunch pressed up to 0.6 bar, with a low juice recovery of 590 litres per ton. The juice gravity-flowed directly to barrel without settling and fermented spontaneously with no added enzymes or yeast. The wine rested in barrel for 4 months prior to sulphuring and a further 7 months' maturation in barrel before racking, blending and bottling.
