Production Details Single-vineyard Chardonnay. Grapes were hand-picked in the early morning and gently whole-bunch pressed up to 0.6 bar, with a low juice recovery of 615 litres per ton using a Willmes Sigma 5 press. The juice gravity-flowed directly to barrel without settling and fermented spontaneously with no added enzymes or yeast. The wine rested in barrel for 4 months prior to sulphuring and a further 7 months' maturation in barrel before racking, blending and bottling. In 2021, 56% of the oak was new and the remainder was split evenly between used barrels.
