Production Details Official Blackwater product page lists Darling origin and 100% Cinsaut. The producer describes a dryland bushvine vineyard planted in the mid-1980s and farmed sustainably. Fruit was harvested into 16.5kg crates, fermented in small open vessels with 40%-60% whole cluster, with no additives and daily punch-downs during 2-3 weeks of maceration. The wine was then drained and basket-pressed, settled for 3 days, and racked mostly to 1,500L concrete egg, with additional production aged in 300L French oak barrels.
