Production Details The grapes are from a block called Annabelle, the coldest site on the farm. The oldest portion (clone 3) was planted in 2005, and newer planting (clone 95) was planted in 2011. The block is split into 4 units based on NDVI photography and satellite images, picked on different days for full ripeness. Sustainable practices include packing pruning canes under vines, using cover crops, and introducing microbial life, avoiding herbicides or inorganic fertilizers. Grapes are hand-picked into small lug boxes in the early morning to keep temperatures low. No sulfur is used in the early stages of winemaking. Double sorting occurs in the vineyard and a final meticulous sorting at the cellar. After gentle pressing and cold settling, the majority of the wine is gravity-fed into small French oak barrels (228-300L). 47% of the barrels are new, and natural (wild) yeast fermentation is used. Fermentation can take 3 weeks to 3 months. After fermentation, the wine undergoes lees contact for an average of 10 months on gross lees without bâtonnage. Newer barrels are left longer (11 months) for integration, while older barrels are emptied at 8-9 months to retain freshness. All batches and barrel treatments are kept separate and assessed individually.
