Production Details Whole berry fraction about 50%, cold soaked for two days in 500kg batches, fermented in open top vats with spontaneous fermentation and some inoculated commercial Pinot yeast culture, manually pressed in an 800kg stainless steel basket press, then matured for 11 months in a combination of new, second, third and fourth filled Burgundy coopered casks before light filtration. 6,867 x 750ml produced. Release date: December 2023.
