Production Details Elgin Valley fruit from south-east-facing vineyards under cool maritime conditions. Grapes were hand harvested at 21-22 Balling, fermented with a commercial Sauvignon Blanc yeast strain at 14C, kept on gross lees for 4 months with periodic stirring, then lightly fined and filtered before bottling. Release date July 2022.
