Production Details Hand-harvested into small crates and kept overnight in a cold room. Extensively bunch sorted by hand before destemming without crushing. Cold soaked for 5-7 days before natural fermentation in open top fermenters, with gentle hand punchdowns and pumpovers twice per day as needed and peak fermentation temperature of 28C. Transferred to 500L and 300L French oak barrels for malolactic fermentation, with 15% new wood and the balance in 2nd, 3rd, and 4th fill barrels. Matured in oak for 16 months and remained on the lees for the full period, then racked and blended in stainless steel tank. Clarified naturally for 2 months before bottling.
