Production Details The grapes were harvested by hand between 11 and 14 February 2023. Ripeness levels were in a tight band between 23.5 and 24.0 degrees Balling. The fruit was destemmed and gravity-fed into tulip-shaped Italian concrete vessels, preserving whole berries for fermentation. To capture the elegance of the fruit and avoid excessive extraction, the wine spent 10 days on skins, with relatively short pump-overs twice each day. Malolactic conversion occurred spontaneously in 300L Burgundian oak barrels (20% new oak). The wine matured on its lees for 10 months. Total production was 11,420 x 750ml and 270 x 1.5L.
