Production Details We take great pride in being amongst a select few wineries with the privilege of crafting a cool climate Cabernet Franc. Planted in 2008, our vines flourish on a picturesque 1.1-hectare, north-facing slope at Casey's Ridge, in Elgin. This exceptional terroir is ideal for Cabernet Franc due to its slow ripening conditions. From the pea berry stage, we meticulously manage the canopy to encourage even ripening and at veraison, we remove all green bunches allowing only the finest fruit to end up in the bottle. Fermentation takes place in stainless steel tanks and the wine is aged in French oak barrels for 16-18 months, 35% new oak.
