Production Details 20% whole bunch. Spontaneous fermentation after cold soaking took place for an extended period with a light punch through daily. After fermentation, the wine was basket pressed to new French oak, where it remained for 10 months. From there it was racked to a natural French oak barrel, where it rested for another 8 months before bottling.

Palate: quince, kumquat, mandarin orange, pear, steely minerals, roasted hazelnuts, almonds, fennel, ginger, linear, fresh, fine texture
