Production Details The grapes were hand-picked from mid February to beginning March 2018 with an average yield of 8 ton per hectare. After whole cluster pressing only the free-run juice was used of which 15% was fermented and matured in concrete egg tanks to give the freshness, vibrancy and lemon lime characteristics to the wine. A further 15% was fermented and matured in Foudres, which aids in creating the texture and softness of the wine. The remainder of the juice was fermented in 300L French oak barrels for 11 months, of which one third was new barrels. This new barrel component ensures the integration of the wine, and is responsible for the length and structure of the final blend. The wine has an ageing potential of 5+ years from vintage.
