Production Details An extremely wet winter with a cold climate led to even budding, and the summer remained wet without a heatwave, causing the grapes to ripen slowly and creating a good correlation between phenolic and flavour ripeness. The grapes were harvested by hand on March 5, 2021 and whole-bunch pressed. The wine was fermented in French oak barrels, 30% of which were new, and matured on fine lees for 11 months. Only the best barrels were bottled.
