Production Details Bush-vine Chenin Blanc from an isolated Malgas vineyard on stony soils, planted to two low-yielding clones on R99, Rug.140, and R110 rootstocks. Yield: 3-4 tons/ha. Handpicked and sorted in the early morning. 60% whole bunch pressed in a basket press and 40% gently crushed and pressed. Spontaneous fermentation occurred. The juice was fermented in larger oak vessels including a 1,000L foudre and 700L barrel. No new oak. Aged 10 months on lees. Lightly fined with bentonite, unfiltered, and bottled by hand.
