Production Details Certified organic Chenin Blanc from vines aged 15-39 years, with low yields of 4-8 tons. Hand-picked grapes harvested at 22˚-23° Balling, whole bunch pressed, naturally fermented in 500-litre French oak barrels; 20% whole bunch fermented in amphora and qvevri. Kept on the lees for 12 months with regular battonage.
