Production Details 100% Shiraz from organically-grown vines aged 10 to 16 years, yielding 4 to 8 tons of fruit. Grapes were harvested in the early mornings between 23 and 24 Balling. 10 to 15% were whole-bunch fermented; the balance was gently destemmed and held in tanks for 2 to 3 days before natural fermentation. Warmer ferments peaked between 30 and 32 Celsius for 7 to 10 days, followed by 25 to 30 days of post-fermentation maceration. Malolactic fermentation took place in first-, second-, and third-fill 225-litre French oak barrels. The wine was aged in barrel for 12 to 16 months and lightly filtered before bottling.
