Production Details Grapes were handpicked, hand sorted, destemmed and transferred into the press where they spent 6 hours on the skins prior to pressing to ensure maximum extraction of flavour and aroma from the grape skins. Once optimal extraction was reached, the pressing cycle took place. The must was then transferred to stainless steel tanks, racked into neutral 4 x 300-litre French oak barrels and underwent alcoholic fermentation and maturation for 12 months. Neutral oak was used to preserve the purity of the fruit in the wine, and not have any intense oak flavours imparted to the wine.
