Production Details Fruit selected from Fairview's best sites. Handpicked at 24.5 degrees balling, destalked, berry-selected, and fermented as separate batches in open oak foudres with natural fermentation and manual punch-downs twice daily. Darling Shiraz and Cabernet Sauvignon had a few days of extended skin contact after fermentation. Basket pressed, then transferred to French oak for malolactic fermentation and 21 months maturation in 100% new French oak. The sheet states the wine was bottled on 4 February but does not confirm the year. Only 9 barrels produced: 8 Shiraz and 1 Cabernet Sauvignon.
