Production Details The nine premium vineyard parcels used for The Journey sit along the foothills of Paarl Mountain in deep decomposed granite soils. The components were hand-picked into small lug boxes, sorted, destalked and lightly crushed into open top fermenters. Pump-overs were performed three to four times per day and fermentation lasted about one week. The free-run wine was drawn off, the skins were pressed separately, and the wine was gravity fed into second- and third-fill 225 litre French oak barrels for 13 months before blending and light filtration prior to bottling.
