Production Details This wine is a harmonious gathering of three distinct voices: 60% Grenache Blanc, bringing structure, layers, and subtle phenolic complexity; 35% Chenin Blanc, adding crystalline acidity and a mineral backbone that gives the wine focus and elegance; and 5% Palomino, lending its fragrant, ethereal signature. All are dryland bush vines, tended by hand and hand-picked with care. Grapes are chilled overnight, whole-bunch pressed, and allowed to settle gently before fermentation awakens spontaneously. The Chenin Blanc finds its voice in 225L seasoned Mittelberger oak barriques, the Grenache Blanc matures in 400L clay amphorae, and the Palomino in a majestic 2,500L foudre — each vessel nurturing its essence while respecting the purity of the fruit.
