Production Details Hand-picked grapes from three exceptional Chardonnay parcels on Robertson estate (limestone-rich calcareous soils with clay subsoils) and Pinot Noir from Napier (decomposed granite on hilly slopes). Only cuvée fraction (first 400L/ton) used. 70% of blend fermented in old Piece Champenoise (205L) barrels and Foudres (2000L), 30% in stainless steel. Aged on primary lees for 5 months before blending and bottling June 11, 2018. Matured on lees for 5 years before disgorgement.
Tasting Notes
Nose: white blossoms, sun-kissed lemons, white peach, toasted almonds, ginger, freshly baked shortbread
Palate: zesty citrus, succulent pears, crisp green apple, subtle oak accents, vibrant tart acidity, very soft creamy mousse, millions of minuscule bubbles, chalky yet succulent finish
