Production Details Hand-picked grapes from 3 special parcels in Robertson (limestone soils) and 1 Pinot Noir block from Durbanville (table mountain sandstone). Only cuvée fraction (first 400L/ton) used. 50% of blend (Chardonnay only) fermented in neutral French oak barrels and Austrian foudres, rest in stainless steel. After 4 months aging on primary lees, components blended, stabilized and bottled May 28, 2019. Wine rested on lees in bottle for 5 years and 7 months before first disgorgement.
Tasting Notes
Nose: white peach, fresh pears, granny smith apples, lemon zest, roasted nuts, brioche, hints of spice
Palate: crisp, vibrant, grapefruit, lemon, peach, apple, pin-prick bubbles, fresh acidity, mouth-watering, juicy finish, long lingering
Sight: brilliant, bright, luminescent yellow, slight green tinge, constant tiny bubbles, persistent mousse
