Production Details Marguerite Chardonnay is grown on our Elgin farm, a renowned cool climate region, ideal for producing elegant and expressive Chardonnay. Our vineyards benefit from cooler temperatures, morning mist and well-drained soils, which contribute to a longer ripening period, allowing the grapes to develop complex flavours while retaining crisp acidity. The grapes are hand-harvested in the early morning at optimal ripeness to preserve freshness and natural acidity. The grapes are sorted and pressed to extract the purest juice. Fermentation occurs in French oak barrels, with around 25% new oak, adding layers of complexity without overpowering the fruit. The wine is aged on the lees for 9-11 months, with regular bâtonnage to enhance texture, mouthfeel, and richness.
