Production Details Hand-harvested fruit with 30% whole-cluster fermentation. Fermented with spontaneous and house-cultured yeasts in open-top stainless steel, then matured for 14 to 16 months with 66% in concrete and 34% in new 400L French puncheons. Aged on fine lees, received small sulfur additions, and was bottled without fining and with light sheet filtration.
