Production Details Hand-picked in the early morning at Cavalli in two separate pickings. Whole-bunch pressed and settled overnight for juice clarity, then inoculated in two separate batches. Fermentation completed in barrel and the wine remained on its lees in 225L French oak barrels for 6 months before blending. Very minimal malolactic fermentation took place to retain fresh acidity.
