Production Details Situated on the cooler east-facing slopes of Bottelary. Trellised vineyard planted in 2004. Whole berries were cold soaked for three days before primary fermentation in tulip-shaped concrete fermenters, with pump-overs up to three times per day and fermentation peaking at 28 C. Spontaneous malolactic conversion took place during 11 months of maturation in 1000-litre French oak vats. The wine was racked once, two weeks before bottling. Maturation note: this wine will be at its most expressive between five and 10 years. Total production: 1,910 x 750ml.
