Production Details Trellised Bottelary vineyard planted with the CF1 Cabernet Franc clone in 2004. Located 16.5 km north of False Bay and 22.5 km east of Table Bay, with marked maritime influence. Whole berries were cold-soaked for three days before primary fermentation in tulip-shaped concrete fermenters, with pump-overs up to three times per day and fermentation peaking at 28 C. Spontaneous malolactic conversion took place during 11 months of maturation in 2000L Austrian oak foudre. The wine was racked once, two weeks before bottling. Vintage note: a cold wet winter replenished groundwater, spring winds and September rains challenged early growth, and the hot dry summer concentrated small healthy berries. Maturation note: this wine will continue to mature and improve for more than a decade. Total production: 2,576 x 750ml and 75 x 1500ml.
