Production Details Grapes are handpicked in the morning and brought to the cellar in a tipping wagon. The bunches are destemmed and the grapes are crushed (slight squeeze to break the berry) and pumped into an upright stainless steel fermenting tank. The wine ferments between 25-28 degrees Celsius for about 10 days and then left on the skins for two weeks of post fermentation maceration. Malo-lactic fermentation is done in tank and then the wine is racked off to 300L French oak barrels for 18 months of barrel maturation. Barrel selection is then done to make up 1000L and a light filtration is done before bottling.
