Production Details 100% Mourvedre grown on the estate in deep sandy soil. Grapes were hand harvested, destalked, and cold soaked for 72 hours before inoculation with a commercial selected yeast. Fermentation was carried out at 22 C with short pump overs on the skins in the morning and evening to preserve fruit and limit tannin extraction. Malolactic fermentation was completed in tank after alcoholic fermentation. The wine matured for 12 months in old 500 litre French oak barrels for minimum wood flavour. No finings were done prior to bottling. Ageing potential stated as 10 years.
