Production Details The grapes were hand-picked into 18kg lug boxes to prevent crushing and lower contamination risk. They were sorted first in the vineyards and again during off-loading at the cellar. Whole bunches were pressed gently to extract juice (620L per ton). After 24 hours of settling, the juice was racked into a combination of stainless steel tanks, cement eggs, and plastic eggs. After fermentation, it was racked onto the fine lees until bottling. The wine was batonnaged every two weeks for 3 months. Cellar for up to 3 years.
