Production Details The grapes were hand-picked into 18kg lug boxes to prevent crushing and lower contamination risk. They were sorted first in the vineyards and again during off-loading at the cellar. The grapes then went into the press as whole bunches to gently extract the juice (620L per ton). After 24 hours of settling, the juice was racked straight into a combination of stainless steel tanks, cement eggs, and plastic eggs. After fermentation, it was racked onto the fine lees until bottling. The wine was batonnaged every two weeks for 3 months. Cellar for up to 3 years.
