Production Details Fruit is sourced from two old vine parcels located on the granite soils of the Simonsberg and Helderberg mountains. Grapes were picked at 22.5-24.0 Balling to obtain freshness and balance. Fermented in open-top fermenters with regular punch downs during fermentation. Aged for 12 months in various sizes of older French oak barrels.
