Pressing Method Whole Cluster
Lees Aging 18 months
Production Details Whole bunches are deposited directly in the presses and pressed gently according to a Champagne pressing programme. Only the cuvee is used in the blend. After blending, yeast and sugar are added for a secondary fermentation in bottle lasting 6 weeks. The sparkling wine is then matured on the lees for an average of 18 months.
