Production Details The grapes were handpicked from Chardonnay vines selected each year by vineyard drone footage. Alternative sides of the trellis were picked two weeks apart, with the morning-sun side contributing fresh citrus notes and the afternoon-sun side adding riper character. Following mixed whole bunch and destemmed pressing, only free run juice was used and clarified through flotation settling. Fermentation took place in 300L and 228L French oak barrels at 16-19C. Following partial malolactic fermentation, the wine remained on fine lees with frequent stirring for 10 months and only the best barrels were selected.
