Production Details Chardonnay grapes were hand harvested from Blocks 11 and 16. Only free run juice was used after a combination of whole bunch and destemmed pressing. The juice was cold settled before fermentation and maturation in French oak barrels, concrete eggs and clay amphorae. An extended lees contact of 9 months with regular batonnage was used to incorporate mouthfeel.
