Production Details Cabernet Franc grapes were handpicked from a single block and processed immediately after early morning picking. The grapes were hand sorted and destemmed before filling 5000L truncated open-top casks for fermentation. Fermentation lasted 10-15 days at 18-26C with gentle punch-downs for soft tannin extraction. The wine was pressed off the skins, underwent malolactic fermentation and then spent 14 months in second-fill French oak.
