Production Details Shiraz grapes were hand harvested from south-facing slopes. Ninety percent of the grapes were destemmed and sorted, then cold settled at 8C for 72 hours prior to fermentation at 24C with pump-overs for flavour, colour and tannin extraction. Ten percent of the grapes underwent immediate carbonic fermentation as whole bunches at 30C. Malolactic fermentation was completed in stainless steel tanks before the wine spent 18 months in a combination of French and American oak barrels.
