Production Details Fermentation between 26-28°C. Malolactic fermentation was completed in older 225L French oak barrels where the wine was matured for a total of 16 months. A portion of the wine was made in the 400L amphora using whole bunches in a carbonic maceration process to add depth and complexity to the wine.
