Production Details Single-vineyard Sauvignon Blanc from a tiny block on Driefontein on the slopes of the Helderberg in Stellenbosch. The site is described as one of the coolest parcels in Stellenbosch, moderated by False Bay breezes and cool night air from the mountain. A minimum-interference approach is used in the vineyard. The wine is naturally fermented without enzymes, preservatives, or stabilisers and then spends 12 months in French oak barrels before bottling. The macroclimate is maritime with cold wet winters and sunny warm summers.
