Production Details Official Keermont Amphitheatre 2018 product page says the wine was selected from several vineyard sites on the estate, hand harvested in small batches and vinified separately using traditional methods. It matured for 29 months in seasoned French oak barriques spanning first-, second- and third-fill barrels, then was bottled by hand without filtration. The wine remained in bottle in the cellar for 5 years before release.
