Production Details The grapes were crushed, destemmed and cold soaked for two days prior to inoculation. Fermentation peaked at 28C with regular controlled pump overs for colour and tannin extraction. After extended maceration, the skins were gently pressed and malolactic conversion was completed in tank and barrels. Barrel maturation lasted 14 months in 100% French oak.
